Do you see those pictures? That is the reason that we got in the restaurant business in the first place. Crowds of happy people out and enjoying great food, drink and service. We have spent our professional lives working toward growing a team of like minded people to give real hospitality to our guests. It is our passion and our profession.
Today we learned that we are able to open up our doors to dining in limited capacity effective May 22nd. If it were as simple as turning the spigot on the “hospitality faucet” back on, in a limited capacity, we certainly would do so.
Unfortunately, there are other factors to add to the equation. The safety and health of our staff and guests is first and foremost. The economic realities of quickly rising food prices and actual food scarcity are another. The financial realities of trying to run a business on 1/3 to 1/2 of the income with many of the expenses not adjusting to that fact. We are working hard to figure all of these things out.
Our “big sister”, Trattoria Stella, just opened for carryout business and will have extremely limited seating starting with the State’s guidance. We are developing practices that are both safe for everyone and transferrable to The Franklin when that is possible.
